A Little Bliss, Baked Fresh

There’s something about a really good cookie that makes everything feel a little better.

Maybe it’s the smell of something freshly baked, the first bite of a crisp edge giving way to a soft, gooey center, or the buttery crumbs left on your fingertips. Maybe it’s the way a favorite cookie can transport us back to childhood kitchens, family gatherings and the people who made us feel at home.

Cookies are comfort food. They have a special way of bringing out the kid in all of us — and this week, we’re spotlighting a new vendor who has made comfort, happiness and a little bit of indulgence the heart of her business.

Meet Baked Bliss Cookies, a New Hampshire-based small-batch bakery specializing in extra-large gourmet stuffed cookies, created by owner Yinette Almonte.

From her commercial kitchen to farmers markets across New Hampshire, Yinette bakes fresh in small batches, creating cookies with crisp edges, soft, gooey centers and premium ingredients. Popular flavors include Ferrero Rocher, S’mores, Kinder Bueno, FlufferNutter and Pistachio Melt.

But Baked Bliss is about more than what comes out of the oven. It’s the story of turning a difficult chapter into a new beginning—and finding a way to share something that brings joy to others, one cookie at a time.

From a challenge to a calling

Yinette’s journey to Baked Bliss began during a particularly challenging time in her life. After facing a major medical challenge, she was laid off when her company downsized. Rather than letting those setbacks define what came next, Yinette decided to take a chance on something she had always loved: baking.

She had always enjoyed being in the kitchen, cooking and creating desserts for family and friends. But she didn’t come from a family of professional bakers. Everything she knows has come through research, recipe testing, experimentation and plenty of trial and error.

That willingness to experiment has become a big part of the Baked Bliss story.

“Every cookie on my menu has been carefully developed and perfected until I felt it was something truly special,” Yinette says.

What began with experimenting in her kitchen has grown into a small business serving customers at farmers markets throughout New Hampshire. And for Yinette, that transformation has been one of the greatest blessings.

Today, she gets to do what she truly loves: creating XL gourmet stuffed cookies and turning a lifelong passion into a business.

Why Baked Bliss?

The name says it all.

“I wanted a name that captured the feeling I hope people would have when they take that first bite,” Yinette explains. “To me, ‘Baked Bliss’ represents comfort, happiness, and that little moment of pure joy you get from enjoying something homemade and delicious.”

Her goal is simple: for every customer to leave with a smile—and an unforgettable cookie.

A little help from her biggest cheerleader

Behind every small business is usually a team of people who help make it possible. For Yinette, her biggest cheerleader is her husband, along with her entire family.

Her husband has spent countless late nights helping prepare for markets, while her family has supported and encouraged her dream from the beginning.

“Having that kind of support means everything to me,” she says.

What’s inside?

When it comes to creating new flavors, Yinette finds inspiration everywhere: classic desserts, childhood favorites, candy bars, seasonal flavors and even suggestions from her customers.

Then comes the testing.

Sometimes a new flavor takes days or even weeks of experimenting to get the texture, filling and flavor exactly right. The goal is to create a cookie that feels a little like a surprise: crisp on the outside, soft and gooey inside, with a filling that keeps you coming back for another bite.

“If it doesn’t wow me, it doesn’t make it onto the menu,” she says.

Fresh for market day

Yinette prepares her doughs ahead of time and bakes fresh the evening before each farmers market. Because these are XL gourmet stuffed cookies with gooey centers, she wants each one to be at its best when it reaches the market table.

Every market is also part of the learning process.

“I’ve grown in so many ways — not just as a baker, but as a business owner,” Yinette says. “Every farmers market teaches me something new, whether it’s creating new flavors, improving my recipes, planning production, or getting to know my customers better.”

Starting a business from scratch hasn’t always been easy. There have been long days, late nights and plenty of learning experiences along the way. But those challenges have helped Yinette grow.

One of the most rewarding parts of the journey is seeing familiar customers return week after week looking for their favorite cookies.

“Knowing that people enjoy what I create makes every bit of hard work worthwhile.”

What’s next?

For now, Yinette is focused on perfecting her signature XL gourmet stuffed cookies. But that doesn’t mean she’s done experimenting.

She’s constantly testing new ideas, seasonal specials and limited-edition flavors, so there’s always something new to look forward to.

And while cookies are the focus, the creativity behind Baked Bliss is clearly not slowing down anytime soon.

We had to ask Yinette the most important question of all: If she could choose just one cookie, which would it be?

Her answer? Pistachio Melt.

“I absolutely love pistachios, so creating that cookie was a labor of love,” she says. “It’s rich, creamy, perfectly balanced, and filled with a smooth pistachio center that people absolutely love.”

And when customers come back week after week asking for it?

“That makes it even more special.”
